In addition to the environmental considerations mentioned above, typically organic wheat is harvested and then milled using traditional methods that avoid any harsh chemicals or additives which help to retain the nutrients and flavour of the wheat.
This is in direct contrast to commercially grown wheat. As well as being grown using chemical fertilisers, pesticides and herbicides, it may additionally have begun life as a genetically modified seed! Conventional flour may also have added enzymes and preservatives that extend its shelf life and make it whiter. This bleaching process uses agents like benzoyl peroxide and chlorine gas, among others, to produce a finer, whiter grain flour. Organic flour is never bleached, artificially processed or chemically ripened. The bran and germ content are left intact and the flour is aged naturally making it a healthier and more nutritious choice.
Organic flour is more expensive than regular flour, but our micro bakery has made the well researched and informed choice to protect and support our environment and to benefit our health and well being. All priceless commodities!
