Purple sweet potatoes are steamed, pureed and then gently folded into the dough. They impart a slight floral note and give the rolls a super soft crumb and a beautiful colour . As it’s customary to eat sweet tasting foods at this time of the year, to symbolise the hope for a sweet and happy year ahead, these rolls are finished with a honeyed glaze.
