Becoming a sourdough baker was not planned! With a love and interest in healthy, organic and sustainable living and the natural world, Charlotte has a background in Zoology and a Masters in Environmental Conservation. She was working in conservation when she met her husband and started a family over 20 years ago. They now have 5 kids, 2 cats, 6 hens and a greedy dog!
Her business evolved gradually from her joint passions for food and the planet. Growing fresh produce from her garden allotment, she began experimenting with fermenting to preserve the surplus. Sourdough and leavening breads slowly and naturally was a progression from there.
Charlotte initially started her business from her home kitchen, but very quickly out grew the space and was actively coerced out by her fed up family , who wanted their kitchen back without bannetons, baskets and a fine coating of flour everywhere! She now has a dedicated micro bakery where she can be left to create a whole variety of sourdough goodies, using organic flours and natural, nutritious and chemical free ingredients.
